Preheat broiler to high. Add can of tomatoes to small sauce pot on medium heat. Add seasonings and stir. Cover and simmer for 12-15 minutes. Add 2 teaspoons of oil to hot cast iron skillet on medium high heat. Add tortillas to pan. Add 2 tablespoons of sauce to each tortilla and spread all around tortilla using spoon. Spread 1/4 cup mozzarella cheese to one tortilla and then to the other. Add about 5-9 sliced pepperonis to each tortilla. Top with 1/2 pinch of crushed red peppers and 1/2 teaspoon of olive oil (optional). Place pan in the oven for 1-2 minutes...until cheese is melted and the pepperoni is lightly crisped. Take out of oven and let cool 1-2 minutes or however warm you like it.
